1 can (15 oz) chickpeas, drained and rinsed

2 tbsp mayo or Greek yogurt

1 tsp Dijon mustard

1 tbsp lemon juice

1 stalk celery, finely chopped

1/4 red onion, finely chopped

Salt & pepper to taste

Optional: chopped parsley, dill, or pickles for extra zing

Instructions

In a bowl, mash chickpeas with a fork or potato masher—leave some chunks for texture.

Mix in mayo (or yogurt), mustard, and lemon juice.

Add celery, red onion, and herbs or pickles if using.

Season with salt and pepper to taste.
