  • 1 lb Smoked Sausage (chicken, pork, or turkey)
  • 23 medium Potatoes (Russet or Yukon gold)
  • 12 Bell Peppers (red, yellow, or green)
  • 1 Onion (yellow or sweet)
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Prep the ingredients by washing and dicing the potatoes into bite-sized cubes. Chop the bell peppers and onion into similar sizes.
  2. Cook the potatoes in a large skillet over medium-high heat with olive oil for 8-10 minutes, allowing them to get a golden-brown crust.
  3. Add the chopped onions and bell peppers to the skillet and cook for another 5-7 minutes until translucent and tender.
  4. Incorporate the sliced smoked sausage and cook for an additional 5-7 minutes until everything is melded together and the sausage is slightly crispy.
  5. Season to perfection by adjusting salt, pepper, and adding fresh herbs if desired.
  6. Finish the dish by cooking everything together for 1-2 minutes and allowing it to sit for a moment before serving.
