Cookies:
1 cup vegan butter, softened
½ cup pumpkin purée
½ cup brown sugar
1 cup granulated sugar
2 tsp vanilla extract
3 ½ cups all-purpose flour
4 tsp baking powder
2 tsp pumpkin pie spice
4 tsp cornstarch
½ tsp salt
Cinnamon Frosting:
2 cups vegan butter, softened
6 tsp vanilla paste (or extract)
2 tsp cinnamon
2 tsp pumpkin pie spice (or more cinnamon)
⅔ cup brown sugar
6 ½ cups powdered sugar
Preheat oven to 350°F. Line baking sheets.
Cream butter, sugars, pumpkin, and vanilla. Mix in dry ingredients until just combined.
Scoop onto sheet, bake 10–12 mins until set but soft. Cool completely.
Beat frosting ingredients until fluffy. Pipe onto cooled cookies with Wilton tip #2A.
