1 lb ground beef
2 cups egg noodles (uncooked)
1 cup sour cream
1 cup cottage cheese
1 small onion, diced
1 clove garlic, minced
1 can (15 oz) tomato sauce
1 cup shredded cheddar cheese
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon Italian seasoning
Optional: chopped parsley for garnish
Preheat oven to 350°F (175°C). Grease a 9×13-inch casserole dish.
Cook noodles according to package directions. Drain and set aside.
In a skillet, heat olive oil and sauté onion until soft. Add garlic and cook 1 minute more.
Add ground beef, salt, pepper, and Italian seasoning. Cook until browned. Stir in tomato sauce and simmer for 5 minutes.
In a bowl, combine sour cream and cottage cheese. Stir in cooked noodles.
