  • 2 tablespoons olive oil
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 can black beans, drained and rinsed
  • 1.5 cups corn kernels (fresh or frozen)
  • 1.5 cups cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 0.5 cup sour cream
  • 0.25 cup fresh cilantro, chopped
  • 2 limes
  • Salt and pepper to taste

Instructions

  1. Prep the Chicken: Trim any excess fat from the chicken breasts and cut into bite-sized pieces.
  2. Marinate and Season: In a bowl, combine olive oil, cumin, chili powder, paprika, salt, and pepper. Toss chicken pieces in the marinade and let sit for 15-20 minutes.
  3. Cook the Chicken: Heat a skillet over medium-high heat and sauté the marinated chicken for 6-8 minutes until golden and cooked through.
  4. Heat the Beans and Corn: In a saucepan, combine black beans and corn. Heat over medium for about 5 minutes.
  5. Prepare the Rice: Cook rice according to package instructions or reheat leftovers.
  6. Compile Your Bowl: Start with a base of rice, add chicken, warm black beans, and corn, then top with cheddar cheese.
  7. Add Fresh Toppings: Top with diced tomatoes, avocado, sour cream, cilantro, and squeeze lime juice over everything.

Notes

Feel free to customize your toppings and sides. Extra lime wedges and tortilla chips make great additions!
