  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon Southwest seasoning
  • 1 cup cooked rice (brown or white)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1 avocado, sliced
  • Lime wedges for serving
  • Fresh cilantro for garnish

Instructions

  1. Prep your chicken: Trim excess fat, pat dry, rub olive oil, and season with Southwest seasoning.
  2. Sear the chicken: Heat skillet, cook chicken for 5-7 minutes on each side until golden brown.
  3. Let it rest: Transfer chicken to a cutting board to rest for a few minutes.
  4. Cook the rice: Prepare according to package instructions, or use pre-cooked rice.
  5. Toss the veggies: In the same skillet, heat black beans and corn, then add diced red onion and cook for another minute.
  6. Slice the chicken: After resting, slice into strips or cubes.
  7. Assemble: Start with rice, layer with the black bean-corn mixture, cherry tomatoes, sliced chicken, and avocado.
  8. Garnish and serve: Finish with lime juice and fresh cilantro.

Notes

Serve in deep bowls for a striking presentation and add tortilla chips for extra crunch.
