  • 1 pound seasoned chicken breast, cooked and diced
  • 1 cup bell peppers, diced
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Cook Your Cilantro Lime Rice: Prepare rice, mixing in lime juice, cilantro, and salt.
  2. Cook the Chicken: Heat oil, cook chicken until 165°F (75°C), then dice.
  3. Sauté the Bell Peppers: In the same skillet, cook bell peppers for 3–4 minutes.
  4. Combine Your Ingredients: Layer rice, chicken, peppers, beans, and corn in containers.
  5. Add the Avocado: Slice and top just before serving.
  6. Garnish and Serve: Finish with cilantro and lime wedges.
