Spicy Peanut Butter Noodles

A comforting bowl of flavorful spicy peanut butter noodles that are quick to prepare and delicious to eat.

  • 8 oz rice noodles
  • 1/2 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • 2 tsp sesame oil
  • 1 tsp chili paste
  • 2 cloves garlic, minced
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • Salt to taste

Instructions

  1. Cook the rice noodles: Bring a large pot of water to a boil. Add the rice noodles and cook according to the package instructions, usually about 4-6 minutes. When they’re just tender, drain and rinse them under cold water to stop the cooking.
  2. Make the sauce: In a medium mixing bowl, combine the peanut butter, soy sauce, maple syrup, sesame oil, chili paste, and minced garlic. Whisk until smooth. Adjust the consistency with warm water if needed.
  3. Toss it all together: In a large mixing bowl, add the cooked noodles and pour the peanut sauce over them. Toss until evenly coated.
  4. Add fresh herbs: Gently fold in the chopped green onions and cilantro, adjusting moisture as needed with sesame oil or water.
  5. Serve and enjoy: Transfer to serving bowls, garnish with extra peanuts and green onions, and drizzle with sriracha if desired.

Notes

Great for meal prep! Keep the sauce separate until ready to serve.
