Stir-Fried Lo Mein With Beef and Broccoli

A classic dish combining the savory richness of beef, the crunch of broccoli, and tender lo mein noodles for a delightful dining experience.

  • 1/2 pound flank or skirt steak, thinly sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/8 teaspoon ground black pepper
  • 1/2 teaspoon Shaoxing wine

  • 1 teaspoon oil (neutral)
  • 1/2 teaspoon cornstarch
  • 1 tablespoon sesame oil
  • 2 teaspoons light soy sauce
  • 2 teaspoons dark soy sauce
  • 1 tablespoon oyster sauce
  • 1/4 teaspoon salt (for sauce)
  • 1/4 teaspoon sugar (for sauce)
  • 1 teaspoon Shaoxing wine (for sauce)
  • 1 tablespoon water (for sauce)
  • Kosher salt (for seasoning)
  • 1 pound fresh lo mein noodles
  • 4 tablespoons vegetable oil
  • 1/2 pound broccoli, cut into florets
  • 3 medium cloves garlic, minced

Instructions

  1. Marinate the beef by combining it with 1/4 teaspoon salt, 1/4 teaspoon sugar, 1/8 teaspoon black pepper, 1/2 teaspoon Shaoxing wine, 1/2 teaspoon light soy sauce, and 1/2 teaspoon cornstarch. Let it rest for 20-30 minutes.
  2. Heat a large wok over medium-high heat. Add 2 tablespoons of vegetable oil.
  3. Stir-fry the broccoli for 2-3 minutes until bright green. Add a dash of water, cover, and steam for 1 minute then set aside.
  4. Sear the marinated beef in the same wok, letting it cook undisturbed for 1-2 minutes, then stir until fully cooked, about 3-4 minutes.
  5. Combine 1 tablespoon sesame oil, 2 teaspoons light soy sauce, 2 teaspoons dark soy sauce, 1 tablespoon oyster sauce, 1/4 teaspoon salt, 1/4 teaspoon sugar, 1 teaspoon Shaoxing wine, and 1 tablespoon water in a bowl.
  6. Add the lo mein noodles to the wok and stir for a minute, then pour in the sauce mixture.
  7. Toss in the beef and broccoli, and stir-fry everything together for 2 minutes until heated through.
  8. Check the taste and adjust seasoning if needed.

Notes

Serve hot, optionally garnished with sesame seeds or green onions. Pairs well with dumplings or spring rolls.
