  • 6 cups fresh baby spinach, washed and thoroughly dried
  • 1 ½ cups fresh strawberries, hulled and sliced into quarters
  • ½ small red onion, thinly sliced into half-moons
  • ½ cup crumbled feta cheese
  • ½ cup roasted pecans or walnuts, roughly chopped
  • ¼ cup sliced cucumber (optional)
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or pure maple syrup
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prep the ingredients: Wash spinach, hull strawberries, and slice red onion.
  2. Toast the nuts: In a dry skillet, toast chopped nuts over medium heat for about 5 minutes.
  3. Make the dressing: Combine olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper in a jar. Shake well.
  4. Assemble the salad: In a bowl, combine spinach, strawberries, red onion, feta, and nuts. Add cucumber if desired.
  5. Dress the salad: Drizzle dressing over the salad and gently toss to combine.
  6. Taste and adjust: Adjust flavors with salt or lemon juice as needed.
  7. Serve: Transfer to a serving dish and garnish with extra strawberries or nuts.

Notes
