  2. Make the dressing: In a separate bowl, combine 1/2 cup mayonnaise, 2 tablespoons honey, 2 tablespoons apple cider vinegar, and 1 tablespoon poppy seeds. Whisk everything together until you get a smooth, creamy dressing. Taste it—I like to add a pinch of salt and pepper here to enhance the flavors.
  3. Toss the spinach: In a large salad bowl, place the baby spinach. You want a large enough bowl to accommodate the tossing. The weight of the greens can crush the other ingredients if it’s too small.
