4 oz cream cheese, softened

2 tablespoons powdered sugar

1/2 teaspoon vanilla extract

For the French Toast:

8 slices of thick bread (brioche or Texas toast work best)

3 large eggs

1/2 cup milk

1 teaspoon cinnamon

1 teaspoon vanilla extract

Butter or oil for the pan

Optional Toppings:

Maple syrup

Fresh berries

Powdered sugar

Instructions

Make the Filling: In a small bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Fold in fruit if using.

Assemble the Toast: Spread the filling on 4 slices of bread, then top with the remaining slices to make sandwiches.

Make the Batter: In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla.

Dip and Cook: Heat butter in a skillet over medium heat. Dip each sandwich into the egg mixture, coating both sides. Cook for 2–3 minutes per side until golden brown.

Serve Warm: Slice in half and top with syrup, berries, or a dusting of powdered sugar.
