Summer Zucchini Salad

A light and fresh salad featuring freshly sliced zucchini, cherry tomatoes, and basil, perfect for summer gatherings.

Ingredients

  • 2 medium fresh zucchinis (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup fresh basil leaves (torn)
  • 1/3 cup crumbled feta cheese
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the zucchini by washing and slicing into thin rounds.
  2. Halve the cherry tomatoes to allow their sweetness to mingle.
  3. Slice the red onion as thinly as possible.
  4. Mix the zucchini, tomatoes, and onion in a large bowl.
  5. Add the torn basil leaves and crumbled feta cheese.
  6. Prepare the dressing by whisking olive oil, lemon juice, salt, and pepper.
  7. Dress the salad and toss gently to combine.
  8. Chill in the refrigerator for 20-30 minutes (optional).

Notes

This salad can last in the fridge for about 2 days if stored properly. For best taste, prepare fresh and keep dressing separate until serving.
