Sweet Alabama Pecanbread

  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it with butter or non-stick spray.
  3. Mix together all-purpose flour, whole wheat flour, baking soda, and salt in a large bowl.
  4. Cream softened butter and brown sugar until light and fluffy.
  5. Add the eggs one at a time, then mix in the vanilla extract.
  6. Combine the dry ingredients with the butter-sugar mixture alternately with buttermilk.
  7. Fold in the chopped pecans.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake in the preheated oven for 55-60 minutes until a toothpick comes out clean.
  10. Cool in the pan for 10-15 minutes before transferring to a wire rack.
