  • 1 lb chicken breast, cubed
  • 1/2 cup pineapple chunks
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup broccoli florets
  • 1/2 cup sugar
  • 1/2 cup vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons ketchup
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Prepare Your Ingredients: Start by prepping all your ingredients. Cube the chicken, slice the bell pepper and onion, chop the broccoli, and measure out your sauce ingredients.
  2. Sauté the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed chicken and season with salt and pepper. Sauté until golden brown and cooked through, about 5-7 minutes.
  3. Add the Vegetables: Push the chicken to one side of the skillet. In the empty space, add the sliced onion, bell pepper, and broccoli florets. Stir-fry for about 3-4 minutes.
  4. Make the Sauce: In a bowl, whisk together the pineapple chunks, sugar, vinegar, soy sauce, ketchup, and cornstarch. Pour the sauce over the chicken and veggies in the skillet.
  5. Simmer and Stir: Stir everything to coat in the sauce. Reduce the heat to medium, and let it simmer for about 2-3 minutes.
  6. Taste and Adjust: Give it a taste and adjust the seasoning if necessary.
  7. Serve It Up: Transfer your sweet and sour chicken to a large serving dish and garnish with sesame seeds or chopped green onions.

Notes

Serve over steamed rice or quinoa, and add extra pineapple or a squeeze of lime for flavor.
