Sweet & Spicy Loaded Sweet Potato Skillet

This dish is where comfort meets bold flavor. Roasted sweet potatoes, savory ground beef, creamy cottage cheese, and hot honey come together in one irresistible skillet. It’s packed with protein, nutrients, and just the right touch of heat. We’ve doubled the recipe and added a few fresh twists for even more depth, crunch, and creaminess.

4 medium sweet potatoes, peeled and cubed

2 tablespoons olive oil (plus more for drizzling)

2 medium onions, chopped

8 cloves garlic, minced (or 2 tsp garlic powder)

2 pounds lean ground beef (or turkey, or plant-based crumbles)

2 cups cottage cheese (or sub with Greek yogurt for tang)

½ cup hot honey (DIY: honey + chili flakes or cayenne)

2 ripe avocados, sliced (or use guacamole)

Salt and black pepper, to taste

Twist #1: 1 tablespoon smoked paprika for depth

Twist #2: 1 cup black beans for fiber and heartiness

Twist #3: ¼ cup chopped green onions or cilantro for garnish

Optional Crunch: Add toasted pepitas or crushed tortilla chips on top

Instructions

Roast the Sweet Potatoes
Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until golden and tender.

Sauté Aromatics & Beef
While potatoes roast, heat remaining olive oil in a large skillet over medium heat. Add onions and cook until softened, about 5 minutes. Add garlic and cook 1 minute more. Add ground beef, breaking it up as it cooks. Season with salt, pepper, and smoked paprika. Cook until browned.

Add Sweet Potatoes
Stir roasted sweet potatoes into the skillet along with black beans (if using). Toss to combine and heat through.

Assemble
Dollop cottage cheese (or Greek yogurt) on top, drizzle with hot honey, and finish with sliced avocado, green onions, and optional crunchy toppings.

Serve
Spoon into bowls and enjoy hot. This dish keeps well for meal prep too.
