Tasty Street Corn Chicken Bowl

A vibrant mix of grilled chicken, sweet corn, creamy sauce, fresh herbs, and zesty lime, inspired by the flavors of Mexican street corn.

  • 1 lb Chicken breast
  • 34 ears Fresh corn (or 1 cup frozen)
  • 1/4 cup Cilantro, chopped
  • 1 Lime, zested and juiced
  • 1/2 cup Mayonnaise
  • 1/2 cup Cotija cheese, crumbled
  • 12 tsp Chili powder
  • Salt and pepper, to taste
  • 2 tbsp Olive oil

Instructions

  1. Prepare the chicken by marinating it in olive oil, lime juice, chili powder, salt, and pepper. Let it sit for 20-30 minutes.
  2. Grill the marinated chicken on medium-high heat for about 6-7 minutes on each side until cooked through.
  3. Char the corn on the grill for about 10 minutes or heat the frozen corn in a pan until caramelized.
  4. Make the street corn sauce by mixing mayonnaise, lime juice, lime zest, cilantro, and chili powder in a bowl.
  5. Assemble the bowl with rice or quinoa, grilled chicken strips, charred corn, and drizzle the creamy sauce over the top.
  6. Serve warm, garnished with cotija cheese and cilantro.

Notes

Feel free to customize with additional toppings like sliced radishes, avocado, or crispy tortilla chips.
