Thai Peanut Chicken Wraps

Delightful wraps filled with shredded chicken, fresh veggies, and a creamy Thai peanut sauce.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup mixed crunchy vegetables (bell peppers, carrots, cucumbers, etc.)
  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 4 large tortillas or wraps
  • Fresh cilantro, for garnish
  • Chopped peanuts, for topping

Instructions

  1. Prepare the Peanut Sauce: In a medium bowl, combine the peanut butter, soy sauce, lime juice, and honey. Mix it all together with a fork or whisk until the mixture is smooth and creamy. If it’s too thick, add a teaspoon of warm water until you achieve your desired consistency.
  2. Shred the Chicken: If you’re using rotisserie chicken, simply pull it apart with forks into bite-sized pieces. For poached chicken, let it cool slightly, then shred it with two forks.
  3. Prepare Your Veggies: Wash and slice your vegetables into thin strips. You want them crunchy! Add in colorful bell peppers, crunchy carrots, cool cucumbers, or any seasonal veggies you have on hand.
  4. Assemble the Wraps: Lay your tortilla flat on a clean surface. Spread a generous dollop of the peanut sauce along the center of the wrap. Layer with shredded chicken and top with your veggies.
  5. Roll it Up: Start at one end and roll tightly, tucking in the sides as you go.
  6. Serve and Enjoy: Place the wraps seam-side down on a platter. Drizzle leftover peanut sauce on top, sprinkle with fresh cilantro and chopped peanuts, and enjoy!
