2 packs ramen noodles (discard seasoning packets)
2 boneless, skinless chicken thighs or breasts
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp olive oil
2 cloves garlic, minced
1 tsp fresh ginger, grated
4 cups chicken broth
1 tbsp miso paste or extra soy sauce (for depth)
1 cup mushrooms, sliced
2 soft-boiled eggs
1 cup baby spinach or bok choy
Scallions, thinly sliced, for topping
Optional: chili oil, sesame seeds, nori strips
Cook the Chicken: Season chicken with soy sauce and cook in olive oil over medium heat until golden and cooked through. Slice and set aside.
