Light, fresh, and bursting with island flavor—these Tropical Chicken Lettuce Wraps combine juicy mango, crisp peppers, and tender chicken in a tangy cilantro-lime dressing. Tucked into butter lettuce and topped with crunchy macadamias, they’re a no-fuss, feel-good meal you’ll want on repeat.

3 cups chopped cold cooked chicken

1 cup diced mango

½ cup diced scallions

½ cup finely diced red bell pepper

Salt and pepper, to taste

½ cup cilantro-lime dressing (store-bought or homemade)

12 small butter lettuce leaves

½ cup coarsely chopped macadamia nuts (optional)

Instructions

In a large bowl, combine chicken, mango, scallions, and bell pepper.

Season with salt and pepper, then toss with cilantro-lime dressing until well coated.

Spoon the mixture into butter lettuce leaves.

Top with chopped macadamia nuts if using.
