Tzatziki Chicken Salad

A creamy, refreshing Tzatziki Chicken Salad bursting with Mediterranean flavors, perfect for busy weeknights or Sunday picnics.

Ingredients

  • 1 cup Greek yogurt
  • 2 cups shredded chicken
  • 1 cup grated cucumbers
  • ½ cup diced red onion
  • 1 lemon, juiced
  • 1 clove garlic, minced
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Prep your chicken by shredding it or cooking it until tender and shredding.
  2. Make your tzatziki sauce by mixing Greek yogurt, lemon juice, garlic, grated cucumber, and fresh herbs in a bowl.
  3. Toss shredded chicken with tzatziki sauce until coated.
  4. Add diced red onion and grated cucumber to the chicken mixture, folding in to distribute flavors.
  5. Chill for about 30 minutes in the refrigerator to meld flavors.

Notes

For a fun twist, serve this salad in pita pockets or on a bed of mixed greens. It can also be made ahead of time as it tastes better the next day.
