Vegan Deconstructed Baked Ziti Bowls : High-Protein, Extra Cheesy & Easy

Ingredients

1½ cups cooked ziti or pasta of choice

1 cup dairy-free ricotta or tofu-based ricotta

1 cup wilted spinach or chopped kale

½ cup marinara sauce

¼ cup vegan mozzarella shreds

2 tbsp nutritional yeast

Salt, pepper, garlic powder (to taste)

Optional: chopped fresh basil or parsley

Instructions

Cook pasta until al dente, drain and set aside.

In a pan, sauté greens with garlic powder, salt, and pepper until wilted.

In a large bowl, mix together cooked pasta, marinara sauce, ricotta, sautéed greens, and nutritional yeast.

Spoon into a baking dish or oven-safe bowl, top with vegan mozzarella, and broil for 3–5 mins until melty and golden.

Serve hot, garnished with fresh herbs if desired.
