  • 1/41/2 Cup Feta Cheese
  • 1/4 Cup Fresh Mint Leaves, Roughly Chopped
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Honey
  • 1/4 Teaspoon Kosher Salt
  • 2 Teaspoons Fresh Lime Juice
  • 1/4 Cup Red Onion, Sliced

Instructions

  1. Prepare the Watermelon: Start by cutting the watermelon in half, then slice it into manageable wedges. Start cubing it by cutting across the wedges, and then carefully slide your knife between the rind and the fruit. Set the cubes aside in a mixing bowl.
  2. Cube the Feta Cheese: Take your feta cheese and crumble it into bite-sized pieces. If you’re using a block of feta, be gentle; it can break apart easily. A fork works wonders here!
  3. Slice the Red Onion: Use a sharp knife to slice your red onion thinly. For a milder flavor, you can soak them in cold water for 10 minutes before adding them to the salad.
  4. Chop the Fresh Mint: Rinse the mint leaves to get rid of any dirt, and then roughly chop them. Pro tip: To release the oils and aroma, gently bruise the leaves before chopping!
  5. Whisk Together the Dressing: In a small bowl, whisk together olive oil, honey, lime juice, and kosher salt until well combined.
  6. Assemble the Salad: In your mixing bowl with the watermelon, add in the crumbled feta, sliced red onion, and chopped mint. Drizzle the dressing over the entire salad and toss gently to combine.
  7. Taste Test: Always sample a spoonful to check if it needs a pinch more salt or honey.
