Watermelon Feta Salad with Mint

A refreshing salad that perfectly balances the juicy sweetness of watermelon with the tangy creaminess of feta and a hint of mint.

Ingredients

  • 4 cups watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare your watermelon: Start by cutting it in half, slicing it into wedges, and then cubing it into approximately 1-inch pieces.
  2. Crumble your feta cheese into bite-sized pieces.
  3. Chop the mint leaves under cold water and pat dry before slicing into thin strips.
  4. Whisk together the olive oil and balsamic vinegar in a small bowl.
  5. Combine the watermelon cubes, crumbled feta, and chopped mint in a large bowl and gently toss.
  6. Drizzle the dressing over the salad just before serving and mix gently.
  7. Finish off with a sprinkle of salt and fresh cracked pepper to taste.

Notes

Best enjoyed fresh but can prepare ingredients a few hours in advance; store separately until serving to avoid sogginess.
