Watermelon Salad with Feta & Mint

A refreshing and vibrant salad featuring sweet watermelon, creamy feta, and fresh mint, perfect for summer gatherings.

  • 6 cups fresh watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped or torn
  • 1/4 small red onion, thinly sliced (optional)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lime or lemon juice
  • Salt and black pepper, to taste

Instructions

  1. Start by slicing your watermelon in half, then cut it into quarters for easier cubing.
  2. Use a sharp chef’s knife to cut the flesh into 1-inch cubes.
  3. Crumble your feta cheese using your fingers or a fork into bite-sized pieces.
  4. Grab a handful of fresh mint leaves, and gently stack them before slicing.
  5. Thinly slice the quarter of the red onion if using.
  6. In a large mixing bowl, gently toss together the watermelon cubes, crumbled feta, chopped mint, and onion.
  7. Drizzle the extra-virgin olive oil and fresh lime juice over the salad.
  8. Allow the salad to rest in the fridge for about 15-20 minutes before serving.

Notes

For added flavor, consider using heirloom watermelon or sheep’s milk feta. Enjoy it fresh for the best taste.
