  • 1 1/2 cups oats
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1/2 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips (or nuts)
  • Optional: Splash of almond milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix dry ingredients: In a bowl, combine almond flour, oats, cinnamon, and baking soda.
  3. Blend wet ingredients: In another bowl, mix pumpkin puree, maple syrup, Greek yogurt, and vanilla extract until smooth.
  4. Combine the wet mixture with the dry mixture, stirring until just combined.
  5. Stir in dark chocolate chips (or nuts).
  6. Scoop dough onto a lined baking sheet.
  7. Bake for 10-12 minutes, until edges are golden brown.
  8. Cool on a wire rack before enjoying.

Notes

For chewier cookies, consider adding an extra egg yolk or reducing the baking time slightly.
