  • 1/2 cup shredded cheddar cheese
  • 1/4 cup red onion, finely chopped
  • 1/2 cup dried cranberries
  • 1/4 cup sunflower seeds
  • 1/2 cup mayonnaise
  • 2 tablespoons white vinegar
  • 2 tablespoons granulated sugar

Instructions

  1. Prepare the broccoli by washing and chopping it into bite-sized pieces.
  2. Chop the red onion finely, ensuring just a hint of its sharp flavor.
  3. Mix the mayonnaise, white vinegar, and sugar in a large mixing bowl until smooth.
  4. Combine the chopped broccoli, red onion, cheddar cheese, cranberries, and sunflower seeds with the dressing, folding gently.
  5. Chill the salad in the fridge for at least 60 minutes to allow flavors to meld.
  6. Serve the chilled salad in a vibrant bowl, optionally garnishing with extra sunflower seeds or cheese.

Notes

For a lighter option, substitute Greek yogurt for mayonnaise. This salad can be prepped a day in advance for convenience.
