  • 3 tbsp milk
  • 2 tsp powdered gelatin
  • ½ cup granulated sugar
  • 1 ¼ cup heavy cream (cold)

  • 2 tbsp apricot preserves
  • 1 ½ tsp hot water

Instructions

  1. Prepare the Gelatin: Combine the powdered gelatin with the hot water in a small bowl. Stir until fully dissolved and set aside to cool.
  2. Blend the Apricots: In a blender, add the chopped apricots and sugar. Blend until smooth, adjusting sweetness as needed.
  3. Heat the Milk: Gently heat the milk in a saucepan until warm. Remove from heat, stir in dissolved gelatin, then add apricot puree.
  4. Whip the Cream: In a large bowl, whip the cold heavy cream until soft peaks form.
  5. Fold the Mixtures: Slowly fold the apricot mixture into the whipped cream using a gentle motion.
  6. Chill the Mousse: Divide the mousse into serving bowls, cover, and chill for at least 240 minutes.
