Speculoos d’Automne

Delightful spiced cookies perfect for the autumn season, reminiscent of family gatherings and warm drinks.

Ingredients

  • 250g all-purpose flour
  • 125g brown sugar
  • 125g butter, softened
  • 1 egg
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, cinnamon, ginger, nutmeg, cloves, and salt in a large mixing bowl.
  3. Cream the softened butter and brown sugar together until light and fluffy.
  4. Beat in the egg until fully combined.
  5. Gradually mix the dry ingredients into the butter-sugar mixture until just combined.
  6. Wrap the dough in cling film and chill in the refrigerator for at least 30 minutes.
  7. Roll out the chilled dough on a floured surface to about 1/4-inch thick and cut into desired shapes.
  8. Bake for 10-12 minutes until the edges are lightly golden.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Dust with powdered sugar if desired before serving.

Notes

For variations, try adding chocolate chips, dried cranberries, or even pumpkin spice!
