Balsamic Garlic Grilled Mushroom Skewers

Delicious balsamic garlic grilled mushroom skewers that make for a perfect summer treat.

Ingredients

  • 2 pounds mushrooms, sliced 1/4 inch thick
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon soy sauce (or tamari)
  • 3 cloves garlic, chopped
  • 1/2 teaspoon thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Prep the mushrooms: Clean them gently with a damp paper towel and slice them into 1/4-inch thick slices.
  2. Mix the marinade: Combine balsamic vinegar, soy sauce, chopped garlic, thyme, salt, and pepper in a bowl and whisk together.
  3. Marinate the mushrooms: Place sliced mushrooms in a resealable bag or bowl, pour marinade over, and let marinate for at least 30 minutes.
  4. Prepare the grill: Preheat to medium-high heat and soak wooden skewers in water if using.
  5. Skewer the mushrooms: Thread 4-6 mushrooms onto skewers, leaving space between them.
  6. Grill the skewers: Cook for 10-12 minutes, turning occasionally until tender and nicely charred.
  7. Serve & enjoy: Remove from grill, let cool, and serve on a platter.

Notes

Experiment by adding other veggies or spices to the skewers for varied flavors.
