  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup raisins or currants
  • 1 teaspoon caraway seeds (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prep your baking sheet with parchment paper or grease it.
  3. Combine the dry ingredients: flour, sugar, baking soda, and salt in a large bowl.
  4. Mix the wet ingredients: buttermilk, melted butter, and eggs in another bowl.
  5. Combine the wet mixture with the dry ingredients, stirring until just combined.
  6. Fold in the raisins or currants and caraway seeds if using.
  7. Knead the dough gently on a floured surface for about 1-2 minutes.
  8. Shape the dough into a round loaf and place it on the baking sheet, scoring a deep “X” on top.
  9. Bake for 30-35 minutes, or until golden brown and a toothpick comes out clean.
  10. Cool for at least 10 minutes before slicing and serving.
