Ingredients

Scale
  • 2 cups whole wheat flour
  • 1 teaspoon salt
  • 1 teaspoon instant yeast
  • 1 cup warm water

Instructions

  1. Combine the dry ingredients in a large mixing bowl, whisk together the whole wheat flour, salt, and instant yeast until well combined.
  2. Add warm water to the center of the dry ingredients and mix until just combined, resulting in a shaggy dough.
  3. Cover the bowl tightly with plastic wrap or a kitchen towel and let it sit at room temperature for 12-18 hours.
  4. Transfer the dough onto a well-floured surface and fold it over itself to shape it into a round ball.
  5. Place the dough ball on parchment paper, cover with a kitchen towel, and let it rise for 1-2 hours.
  6. Preheat your oven to 450°F (232°C) and place a cast-iron pot inside to heat up.
  7. Remove the hot pot, lift the parchment paper with the dough into the pot, cover with the lid, and bake for 30 minutes.
  8. After 30 minutes, remove the lid and bake for an additional 15-20 minutes until browned and hollow-sounding when tapped.
  9. Cool on a wire rack for at least 30 minutes before slicing.
