Instructions

  1. Soak the beans: Begin by soaking your black beans overnight. If you’re in a hurry, a quick soak works too!
  2. Prep your veggies: Peel and dice your butternut squash and chop the collard greens, onion, and garlic.
  3. Sauté the aromatics: In a large pot, heat olive oil over medium heat and sauté the diced onion until translucent.
  4. Add the garlic: Toss in the minced garlic and sauté for an additional minute.
  5. Stir in the spices: Add cumin and smoked paprika, stirring for about 30 seconds to bloom the spices.
  6. Add the squash and beans: Stir in diced butternut squash and soaked black beans.
