Ingredients

Scale
  • 1 lb chicken breasts (or thighs), sliced against the grain into 1/4” (5-mm) thick pieces
  • 1 tablespoon light soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth
  • 2 tablespoons light soy sauce
  • 2 tablespoons Shaoxing wine
  • 2 teaspoons dark soy sauce
  • 1 tablespoon cornstarch
  • 1 1/2 tablespoons sugar
  • 2 teaspoons coarsely ground black pepper
  • 1/8 teaspoon salt
  • 2 tablespoons peanut oil (or vegetable oil)
  • 1 tablespoon minced ginger
  • 2 cloves garlic, minced
  • 1/2 white onion, chopped
  • 2 bell peppers, chopped (mixed colors)

Instructions

  1. Marinate the chicken: In a bowl, combine the sliced chicken, light soy sauce, Shaoxing wine, and 1 tablespoon of cornstarch. Mix well and let it marinate for about 15-30 minutes.
  2. Prep the sauce: In a separate bowl, whisk together the chicken broth, 2 tablespoons of light soy sauce, 2 tablespoons of Shaoxing wine, dark soy sauce, the remaining cornstarch, and sugar until well combined. Set it aside.
  3. Heat the oil: In a large wok or non-stick skillet, heat the peanut oil over medium-high heat.
  4. Cook the chicken: Add the marinated chicken pieces to the hot oil and let them sear for about 2-3 minutes. Flip them over and continue cooking for another 2-3 minutes.
  5. Add aromatics: Once the chicken is cooked, add the minced garlic, ginger, and chopped onion. Stir-fry for another minute.
  6. Introduce the peppers: Toss in the chopped bell peppers and cook for an additional 2-3 minutes.
  7. Add the sauce: Pour the prepared sauce over the chicken and vegetables. Stir well and allow it to simmer for about 2-3 minutes.
  8. Finish with black pepper: Sprinkle in coarsely ground black pepper and a pinch of salt. Stir to mix well.
  9. Taste and adjust: Before serving, taste and adjust the seasoning as desired.
