Broccoli Salad with Bacon

A vibrant and crunchy Broccoli Salad with crispy bacon, tangy cranberries, and a creamy dressing, perfect for gatherings and family dinners.

  • 1011 strips bacon (cooked)
  • 2 heads broccoli (about 1 and 1/2 pounds or 56 cups)
  • 1 cup dried cranberries
  • 1/3 cup sunflower seeds (roasted and salted)
  • 1 cup cheddar cheese (shredded)
  • 1/3 cup chopped red onion (or more to taste)
  • 1 and 1/4 cups Miracle Whip or mayonnaise
  • 1 lemon (zest and 1 tablespoon juice)
  • 2 tablespoons white wine vinegar
  • 1/4 cup sugar
  • 1 and 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Cook the bacon until crispy, then chop into bite-sized pieces.
  2. Prepare the broccoli by cutting off the florets and rinsing them under cold water.
  3. Mix the dressing by combining Miracle Whip (or mayonnaise), lemon juice and zest, white wine vinegar, sugar, salt, black pepper, dry mustard, and cayenne pepper in a bowl.
  4. Combine the broccoli, bacon, cranberries, sunflower seeds, cheese, and onion into the dressing.
  5. Toss the salad gently until everything is evenly coated.
  6. Let it chill in the refrigerator for at least 30 minutes.
  7. Give it a final toss before serving, and enjoy!

Notes

This salad is naturally gluten-free and can be made ahead of time to enhance flavor.
