A delightful Italian appetizer featuring crispy toasted bread topped with juicy tomatoes, fragrant basil, and a drizzle of olive oil.

  • 1 French baguette or Italian ciabatta
  • 4 ripe tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven: Set it to 400°F (200°C).
  2. Prepare your bread: Slice the baguette or ciabatta into 1/2-inch thick slices.
  3. Toast the bread: Place the slices on a baking sheet, drizzle lightly with olive oil, and sprinkle with salt. Bake for about 8-10 minutes, until golden and crisp.
  4. Make the topping: In a medium bowl, combine the diced tomatoes, minced garlic, balsamic vinegar, chopped basil, and a drizzle of olive oil. Toss gently.
  5. Season to perfection: Taste and add salt and pepper as needed.
  6. Assemble the bruschetta: Spoon a generous amount of the tomato mixture onto each slice of toasted bread.
  7. Final touch: Drizzle a little extra olive oil over the top and add more basil for garnish.

Notes

Enjoy fresh right away while the bread is still crisp. For advanced preparation, make the topping ahead but toast bread just before serving.
