Cowboy Butter Chicken Pasta

A creamy, flavorful pasta dish with tender chicken, butter, and a hint of spice, perfect for a cozy dinner.

Ingredients

Scale
  • 12 ounces Pasta of your choice (e.g., penne or fettuccine)
  • 1 pound Chicken breast, boneless and skinless, cut into bite-sized pieces
  • 4 tablespoons Butter (unsalted recommended)
  • 4 cloves Garlic, minced
  • 1 medium Onion, diced
  • 1 cup Heavy cream
  • 1 cup Chicken broth (low-sodium preferred)
  • 1 cup Parmesan cheese, grated
  • 1 tablespoon Italian seasoning
  • 1 teaspoon Red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the Pasta: In a large pot, bring salted water to a boil. Add your pasta and cook according to package directions until al dente. Reserve about a cup of the pasta water before draining.
  2. Sauté Chicken: In a large skillet over medium-high heat, melt the butter. Toss in the diced chicken and season with salt and pepper, cooking until golden brown, about 5-7 minutes.
  3. Flavor it Up: Add the minced garlic and diced onion, sautéing for 2-3 minutes until the onion is translucent.
  4. Create the Creamy Sauce: Stir in the heavy cream and chicken broth, bringing to a gentle simmer. Add the Italian seasoning and red pepper flakes, letting it bubble for about 5 minutes until slightly thickened.
  5. Combine it All: Add the cooked pasta directly into the skillet with the sauce. Toss until well-coated and sprinkle in the grated Parmesan cheese until melted.
  6. Serve and Garnish: Plate your Cowboy Butter Chicken Pasta and finish with fresh parsley for a pop of color.
