Carrot Bread

A warm and inviting carrot bread that combines the earthy sweetness of carrots with warm spices, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it with butter or non-stick spray.
  3. Mix the flour, baking soda, baking powder, ground cinnamon, and salt in a large bowl.
  4. Whisk the granulated sugar, brown sugar, and vegetable oil in another bowl until well combined.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Combine the dry ingredient mixture with the wet mixture, folding gently.
  7. Fold in the grated carrots and optional nuts until just incorporated.
  8. Pour the batter into the greased loaf pan.
  9. Bake for about 60 minutes, checking for doneness with a toothpick.
  10. Cool the bread in the pan for 10-15 minutes before transferring it to a wire rack.

Notes
