Chicken and Sweet Potato Meal Prep

A deliciously easy chicken and sweet potato meal prep recipe that combines wholesome ingredients for a comforting, nutritious meal.

  • 2 pounds chicken breast, diced
  • 4 medium sweet potatoes, cubed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups broccoli florets
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C).
  2. Prepare the chicken: In a large bowl, toss the diced chicken breast with olive oil, garlic powder, paprika, salt, and pepper until well-coated.
  3. Prepare the sweet potatoes: In another bowl, toss the cubed sweet potatoes with olive oil, salt, and paprika.
  4. Arrange everything on baking sheets: Line a large baking sheet with parchment paper and spread the seasoned chicken on one half and the sweet potatoes on the other.
  5. Roast for about 20 minutes until the chicken is cooked through and the sweet potatoes are tender.
  6. Add the broccoli: Toss the broccoli florets onto the baking sheet and drizzle with olive oil, salt, and pepper. Return everything to the oven for another 10-12 minutes.
  7. Let it rest for 5 minutes.
  8. Chop and portion into meal prep containers.
  9. Garnish with fresh parsley.

Notes

Meal prep can last in the fridge for about 4-5 days or be frozen for up to 3 months.
