Chicken Burrito Bowl

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 can black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • 1/2 cup creamy sauce (like ranch or yogurt-based dressing)
  • Salt and pepper to taste
  • Optional toppings: Diced tomatoes, avocado, fresh cilantro, lime wedges

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the diced chicken, seasoning it with salt, pepper, and taco seasoning.
  3. Cook the chicken for about 6-8 minutes, or until it’s no longer pink.
  4. Add the corn and black beans to the skillet, stirring well.
  5. Heat through for another 4-5 minutes.
  6. Fluff the cooked rice with a fork.
  7. Layer rice in bowls, topping with the chicken and veggie mixture.
  8. Drizzle with the creamy sauce.
  9. Add your choice of fresh toppings.
  10. Serve and enjoy!
