Chicken Caesar Pasta Salad

A delightful Chicken Caesar Pasta Salad that combines juicy grilled chicken, crispy turkey bacon, and romaine lettuce, all tossed in zesty Caesar dressing.

  • 8 ounces (½ box) rotini pasta
  • 2 cups diced grilled chicken
  • 8 ounces turkey bacon, cooked and crumbled
  • 1 heart romaine lettuce, chopped
  • ½ cup shredded parmesan cheese
  • ¾ cup Caesar salad dressing

Instructions

  1. Bring a large pot of salted water to boil. Add in the rotini pasta and cook according to package instructions until al dente. Drain and rinse it under cool water.
  2. Season your chicken breast with salt, pepper, and olive oil. Grill on medium heat until cooked through, around 6-7 minutes per side. Slice into bite-sized cubes.
  3. Cook the turkey bacon in a skillet over medium heat until crispy. Remove and crumble.
  4. Chop the romaine lettuce into bite-sized pieces and add it to a mixing bowl.
  5. Combine cooled rotini, diced chicken, crumbled bacon, and parmesan in the mixing bowl with the romaine. Drizzle with Caesar dressing.
  6. Toss the ingredients together gently with tongs.
  7. Cover with plastic wrap and chill in the refrigerator for about 30 minutes (optional).
  8. Serve with a sprinkle of parmesan and black pepper.

Notes

This dish is great for meal prep or potlucks. Store leftovers in an airtight container for 2-3 days.
