Chicken Garlic Parmesan Pasta

A cozy pasta dish that combines juicy chicken, creamy garlic sauce, and the golden sprinkle of Parmesan, perfect for weeknight dinners.

  • 1 1/2 lb chicken breast
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 12 oz gluten-free farfalle pasta
  • 4 tbsp butter
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp gluten-free 1:1 flour
  • 3 cups heavy cream
  • 12 oz shredded Parmesan
  • 1/4 cup pasta water
  • 1/2 tsp salt
  • 1 tsp garlic powder

Instructions

  1. Sauté the chicken: In a large skillet over medium heat, add the olive oil. Once it’s shimmering, toss in the chicken breast pieces. Sprinkle with paprika, oregano, garlic powder, thyme, black pepper, and salt. Cook for about 6-8 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
  2. Boil the pasta: While the chicken is cooking, bring a large pot of salted water to a boil. Add the gluten-free farfalle pasta and cook according to the package instructions until al dente. Reserve 1/4 cup of the pasta water, then drain the rest.
  3. Make the creamy sauce: In the same skillet with the cooked chicken, melt the butter over medium heat. Add the dry shallots and Italian seasoning, sautéing for about a minute until fragrant. Pour in the chicken broth and let it bubble for a minute or two. Then, slowly whisk in the gluten-free flour until no lumps remain.
  4. Add the cream and cheese: Now, add the heavy cream to the skillet and stir well. Bring to a gentle simmer, allowing the sauce to thicken slightly (about 3-5 minutes). Gradually stir in the Parmesan cheese and pasta water, mixing until you have a creamy, luscious sauce.
  5. Combine pasta and sauce: Add the cooked pasta to the sauce, tossing everything to coat. Allow it to heat through for a minute. Taste and adjust the seasoning with salt and pepper as needed.

Notes

For extra flavor, you can add some lemon zest at the end. Serve with a sprinkle of chopped parsley or garlic bread.
