Classic Chicken Tortilla Soup

A cozy and heartwarming chicken tortilla soup that’s perfect for chilly evenings.

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Tortilla strips for serving
  • Avocado, diced (optional)
  • Lime wedges (optional)
  • Cilantro for garnish (optional)

Instructions

  1. Sauté the onions in olive oil until softened, then add the garlic.
  2. Pour in the chicken broth, diced tomatoes, and black beans, stirring well.
  3. Add corn, chili powder, cumin, salt, and pepper, and let it simmer for about 10 minutes.
  4. Mix in the shredded chicken and simmer for another 5-10 minutes.
  5. Prepare toppings while the soup simmers: slice avocado, cut lime wedges, and chop cilantro.
  6. Serve the soup in bowls, topped with tortilla strips, avocado, cilantro, and a squeeze of lime.

Notes

For a spicy kick, add jalapeños or cayenne pepper. This soup can be made ahead and freezes well.
