Delicious Corn Ribs

A fun and flavorful way to enjoy corn on the cob, these corn ribs are crispy, seasoned, and perfect for any gathering.

Ingredients

  • 4 whole corn cobs
  • 3 tbsp extra virgin olive oil
  • 2 tbsp parsley or coriander/cilantro (roughly chopped)
  • 1 1/2 tsp garlic powder
  • 2 1/2 tsp smoked paprika
  • 2 tsp cooking/kosher salt
  • 2 tsp black pepper
  • 50g/3 tbsp unsalted butter
  • 1 garlic clove (finely minced)

Instructions

  1. Prepare the Corn by cutting the corn cobs into ribs.
  2. Season the Corn with olive oil, garlic powder, paprika, salt, and black pepper.
  3. Roast the Corn in a preheated oven at 400°F (200°C) for 20-25 minutes.
  4. Brush with melted garlic butter once the corn is done roasting.
  5. Garnish and Serve with fresh parsley or coriander.

Notes

For extra crispy texture, broil the corn for the last few minutes.
