Cozy Butternut Squash Soup

A comforting and creamy butternut squash soup that warms the heart and belly, perfect for any occasion.

  • 1 large butternut squash, peeled, seeded, and cubed
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, chopped
  • 4 cups vegetable broth
  • 1/2 cup coconut milk or heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon fresh thyme or chopped sage
  • 2 tablespoons toasted pumpkin seeds, for serving

Instructions

  1. Prep the butternut squash by peeling, seeding, and cubing it.
  2. Sauté the aromatics: heat olive oil in a large pot, add onion and cook until translucent, then add garlic and carrot.
  3. Add the butternut squash to the pot and stir for about 5 minutes.
  4. Pour in the vegetable broth and bring to a gentle boil, then reduce heat and simmer until squash is tender.
  5. Blend the mixture until smooth using an immersion blender or a countertop blender.
  6. Stir in coconut milk, salt, pepper, cinnamon, nutmeg, and herbs, then let simmer for an additional 5 minutes.
  7. Taste and adjust seasoning as needed.

Notes

This soup can be made ahead of time and stored in the fridge for up to 5 days or frozen for 3 months. Reheat gently before serving.
