Oven Roasted Parmesan Potatoes

Crispy on the outside, tender on the inside, these Oven Roasted Parmesan Potatoes are the perfect side dish for any gathering.

  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 1 cup grated parmesan cheese
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse the baby potatoes under cold water and pat them dry.
  3. Toss the potatoes in a bowl with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  4. Add the grated parmesan cheese and toss again to coat.
  5. Spread the potatoes on a baking sheet lined with parchment paper.
  6. Roast in the oven for 25–30 minutes.
  7. Flip the potatoes halfway through cooking for even browning.
  8. Check for doneness using a fork; if it slides easily, they’re ready!

Notes

For extra flavor, consider infusing with fresh herbs or adding a squeeze of lemon juice before serving.
