  • 5 oz French bread baguette, sliced diagonally into ten ½-ounce slices
  • ½ cup chopped tomatoes (sweet cherry or diced Roma)
  • 1 tablespoon chopped fresh basil (or 1 teaspoon dried basil)
  • ½ teaspoon minced garlic
  • ¼ teaspoon olive oil
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • 3 oz goat cheese, at room temperature
  • 1 teaspoon balsamic glaze

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the baguette by placing slices on a baking sheet and drizzling with olive oil, salt, and pepper.
  3. Toast the bread in the oven for 8-10 minutes until golden brown and crispy.
  4. Mix the chopped tomatoes, basil, garlic, olive oil, salt, and pepper in a bowl.
  5. Spread a generous layer of goat cheese on each slice of toast.
  6. Assemble by spooning the tomato mixture over the cheese on each bruschetta.
  7. Finish with a drizzle of balsamic glaze.
  8. Serve immediately while the bread is still warm.
