Crock Pot Sweet Hawaiian Chicken

  • 1 red pepper, roughly chopped
  • 20 ounce can pineapple chunks with juice
  • 1/3 cup soy sauce
  • 1/3 cup BBQ sauce

  • 1/4 cup orange juice
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced garlic
  • 1/2 teaspoon grated ginger
  • Green onions, for garnish

Instructions

  1. Prep your chicken: Start by cutting your chicken thighs (or breasts) into bite-sized chunks. Place the pieces directly into your Crock Pot.
  2. Chop the red pepper: Roughly chop the red pepper and toss them in with the chicken.
  3. Add pineapple chunks: Pour in the can of pineapple chunks with juice.
  4. Mix the sauces together: In a bowl, combine soy sauce, BBQ sauce, brown sugar, orange juice, sesame oil, rice vinegar, garlic, and ginger.
  5. Pour the sauce over ingredients: Pour the sauce over the chicken and pineapple, ensuring everything is well-coated.
  6. Set your Crock Pot: Cover your Crock Pot and set it to low heat for 4-6 hours.
  7. Prepare for serving: Stir everything about 30 minutes before the end of cooking. Adjust sweetness to taste.
