Crockpot Greek Chicken Pitas with Tzatziki

  • 2 lbs Boneless, Skinless Chicken Breasts
  • 2 tbsp Olive Oil
  • 1/4 cup Greek Yogurt
  • 2 tbsp Freshly Squeezed Lemon Juice
  • 3 cloves Garlic (Minced)
  • 1 tbsp Dried Oregano
  • 1 tsp Paprika
  • Salt to taste
  • Pepper to taste
  • Toppings: Cucumber, Tomato, Feta Cheese, Fresh Dill
  • Pitas (Store-Bought or Homemade)

Instructions

  1. Prep your chicken: Place your chicken breasts in the bottom of the crockpot.
  2. Mix your marinade: In a separate bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and pepper.
  3. Pour the marinade over chicken, making sure every piece is coated.
  4. Set your crockpot: Cover and set it for 6 hours on low heat or 3 hours on high.
  5. Shred the chicken: Once cooked, shred the chicken using two forks in the crockpot.
  6. Prepare your tzatziki: Combine Greek yogurt, diced cucumber, a splash of lemon juice, minced garlic, salt, and chopped fresh dill in a small bowl.
  7. Warm your pitas: Heat pitas in a skillet or wrap in foil and use the oven.
  8. Build your pitas: Add shredded Greek chicken, tzatziki, cucumber, tomato, and feta cheese into the pitas.
