Delightful Pumpkin Crème Brûlée

A cozy fall dessert that combines the silky smoothness of traditional crème brûlée with the warm flavors of pumpkin and spices.

Ingredients

  • 2 cups Heavy Whipping Cream
  • ½ cup Granulated Sugar + additional for caramelizing
  • 5 large Egg Yolks
  • 1 cup Pumpkin Puree
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Pumpkin Spice
  • a pinch Salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Place 4-6 ramekins in a baking dish large enough to hold them all.
  3. In a medium saucepan over medium heat, combine the heavy whipping cream, half of the granulated sugar, and your pumpkin spice.
  4. Whisk together the egg yolks and the remaining sugar until pale and thick.
  5. Slowly pour the warm cream mixture into the egg yolks, whisking continuously.
  6. Add in your pumpkin puree and vanilla extract, mixing until well combined.
  7. Strain the custard mixture through a fine mesh sieve into a bowl.
  8. Carefully pour the custard into each ramekin.
  9. Pour hot water into the baking dish until halfway up the sides of the ramekins.
  10. Bake for 25-30 minutes until edges are set but center is slightly jiggly.
  11. Remove from the water bath and cool for about an hour, then refrigerate for at least 2 hours.
  12. Sprinkle granulated sugar on top and using a kitchen torch, caramelize the sugar until crispy.
  13. Let sit for a minute before serving.

Notes

Serve with a sprinkle of cinnamon or nutmeg and a dollop of whipped cream or ice cream.
